Ingredients
- 1 1/2
 ounce Dillon’s Rose Gin {or a more traditional gin like the Dry Gin 7}
- 1/4
 fresh lemon juice
- 2
 dashes Dillon’s Pear Bitters
- 3
 ounces Sparkling Wine or Champagne
Lemon twist for garnish
How to prepare
- Step 1
 - In a mixing glass, combine Dillon’s Rose Gin, lemon juice and bitters.
 - Step 2
 - Add ice and stir until chilled.
 - Step 3
 - Pour into Champagne flute or vintage coupe glass. Top with bubbles.
 - Step 4
 - Garnish with lemon twist.
 
*If replacing the Rose Gin with a more traditional London-dry style, be sure to add a 1/4 ounce of simple syrup or sugar cube to sweeten the cocktail ever so slightly.
